June Cooking Challenge

Summer break's not what it used to be as a kid. Sure it's nice having summer off. Lots of opportunity to enjoy the weather and relax, but sometimes it's a little boring. Lately I've been pretty occupied filling out job applications and preparing for our various trips this summer. Now some of that stuff is starting to wind down and I'm running out of things to do. I was talking to Kaleigh yesterday about our blogs and and food and stuff. I have done some blogging on here about different recipes I've tried and they are almost always my favorite posts. Kaleigh suggested that since I enjoy it so much and Brian and I usually have pretty awesome meals I should start doing more of a food blog. She thought a good way to start out would be to do a 30 day cooking challenging. 30 new recipes in 30 days. I said I will accept that challenge! I started planning and thinking about how I would do it. There are going to be some restrictions that might make it kind of hard. First and most important: staying on budget. But I manage to get pretty creative while not going too crazy on our grocery bill. Also there are going to be some days in June where I won't be able to cook. We'll be out of town or on the road. But I figured if I do side dishes on the days I do cook that are new they can count as my new recipes. So here we go! June Cooking Challenge! 30 new recipes in 30 days!

First up, something easy:

Lunch (an invention of my own with what's on hand):

Smoked tuna with black bean salsa wraps!

I picked up some tuna a the store on Monday for lunches this week and last night we made some black bean salsa to go with our pork and green sauce. I used part of one pack of tuna for lunch yesterday and made a tuna quesadilla. So I'll use the rest of that with some of the salsa. It has black beans, corn, red onion, jalapenos, diced tomatoes, and lime juice. Wrap that up in a tortilla with maybe a little sour cream. Should be delicious! I'll post a picture when I'm done!
